I like recommend to use some USB-microcontroller as sensor interface, to do this at the moment you just need to use USB-host mode patch but it looks a like that it is in roadmap as standard feature http://maemo.org/intro/roadmap.html I have personally used Atmel SAM7S series microcontrollers for sensor interface but you can use nearly any other USB-device mode controller.
