It's quite simple: do not use them and they will be in quiescent state. Disable the audio, do not start any camera application, switch the bluetooth off and do the same for WLAN (no automatic pairing). Disable the LED blinking and remove the memory cards.
And whatever might come to your mind in terms of disabling sw settings and features (sorry, it's been a while since n800, i do not remember all on top of my head). It would be interesting if you can share your results.
