There are two things that I can think of as UI suggestions. The first one is easy. Put a clock in the status bar so that you can see the time in any application (although not in full screen mode).
My second suggestion is probably what you were not looking for when you asked the question, but I will try anyway: improve handwriting recognition. Make it so that I can print anywhere on the screen not just in a little box (a-la Grafitti). Also, it should be letter-based, not word-based with dictionary lookup. In short, HWR should be "natural handwriting recognition". My non-technical mother should be able to use it with ease. As far as I have seen to date, there is no device shipping that accomplishes this. I am willing to work with you further on this, if necessary.
Since it has already been brought up, I will not mention that having the ability to rotate the screen would be nice as well. 8-)
