In this very same page I had put a link to http://maemo.org/community/wiki/howto_flashlatestnokiaimagewithmacosx/ but then I got a couple of comments about the fact that the page wasn't updated so I decided to drop it. Looking for "mac" in the maemo.org search provides now a link to this page. I would say the information there is useful to flash the N800 from a Mac, but I haven't tried myself. It's a wiki page, so you can put in shape if you wish.
