If you really mean "I am getting a resultant RGB JPG without a K channel", which is what you seem to have said above, then "of course you aren't getting a K channel". RGB images don't *have* a K channel. If what you actually meant was "I appear to be getting an RGB image which was built without looking at the K channel in the CMYK TIFF", then that would be a problem, but I expect convert to deal with that correctly -- from my limited knowledge of IM.
