It appears when you look at the header it still shows "(envelope-from [EMAIL PROTECTED]), Is there a way so it doesn't show the envelope-from in the header?)
Nope. This information is put on the "Received:" headers by the receiving MTA.
Because this is put on by their machine and not yours, there's nothing you can do about this unless you can find some way to get mailman or the message submission process to change the envelope sender address that you're using.
