There is no "main address table" in current and previous versions of Mailman (this is a feature which may be incorpated for Mailman 3.x, however). The list of users for a mailing list is stored within a binary "pickle" for the list. Each list has a separate "pickle" containing the set of users which are subscribed to that list.
Yes, there is a page where a user can log in and change their e-mail address in a single place for all lists, but this is a separate issue.
Regardless, the upgrade process doesn't change the e-mail address of any users. It simply upgrades the lists in-place. None of the e-mail addresses should change, neither for the list itself, nor for any of the users.
