As I understand the current implimentation of virtual domains, much of the config is kept as site-wide, not domain- or list-wide, data. To do what you're talking about would require at least domain-wide config. Probably the easiest way to get the 'multiple' domains that you want is to run one instance of mailman for each domain. Yoy can then configure the smtphost for that specific domain.
