My host_name *is* set to lists.bates.edu. Following is a snip from my
config_list -o command:
# The "host_name" is the preferred name for email to mailman-related
# addresses on this host, and generally should be the mail host's
# exchanger address, if any. This setting can be useful for selecting
# among alternative names of a host that has multiple addresses.
host_name = 'lists.bates.edu'
And I have run fix_url - twice.

the domain of this address is the list's host_name attribute (near the
bottom of General Options). This is set at list creation time and
subsequent changes in mm_cfg.py don't affect it. You can change
host_name on the General Options page, but for a large number of
lists, use fix_url (see the FAQ at <http://wiki.list.org/x/mIA9>).
I have attached headers from an example email.
Attachments with Content-Type other than text/plain don't make it to
the list.
