If the message in the sent folder has no Cc: information, then where
does it come from?

I am not familiar with Outlook, but most MUAs compose an RFC822
compliant message with at least From:, To:, Cc:, Subject:, Date: and
maybe Message-ID: headers and that's what goes in a sent folder.
