If you want to change -bounces to -admin (a synonym for -bounces in MM 2.1, but not MM 3) in the envelope sender, you'd need to modify the source code. If you mean you would like to change -leave to -unsubscribe in the List-Unsubscribe: header, again you'd need to modify the source code.
