Perhaps one can use an application like [Radio Silence](https://radiosilenceapp.com) or [Little Snitch](https://www.obdev.at/products/littlesnitch/index.html) to block outbound requests from MailMate?

I just take the computer offline — I work mostly in cabled environment, so it is easy to just unplug and then replug when I am done.
