The MailMate help says that there is a popup menu in the Composer

When I select plain text, it seems that MailMate still generates
HTML.
It's been discussed before that currently MailMate offers no way to
make absolutely sure there won't be an HTML part.
Not quite true. It IS a bit of a chore.
1. Set the Composer pull dow to "Plain text"
2. DO NOT use a signature which includes an HTML variant
In the Composer prefs panel set these:
3. "Preview: Display" to "when generating HTML"
(This assures that you will KNOW if you're generating HTML)
4. "Rich Text(HTML): Markup syntax:" to "None"
5. "Default theme is" to "None"
6. "Highlight code using" to "Nothing"
7. "Math language" to "None"
I got an earful from Claus Aßmann (one of the maintainers of
sendmail) because of that ;-)
