I had a similar problem when installing an older version of Mapnik on something that must have been Ubuntu Gutsy at the time; I found that I had to create symlinks for all the boost libraries because while they were multithreaded they were not named like that (e.g. my library was libboost_system not libboost_system-mt which Mapnik was expecting).
