Without having looked at the OSM style sheets again, I am recalling, that the background is the sea color, and land masses are rendered from the coastline shape files. To me it seems, that rendering these does not work for you. Did you download and unpack these, and are the references to these in the style files okay? Maybe you can try disabling all layers except for background and land mass layers for checking.
