Here are a few things that I discovered about the layout page size issue. I 
have machines with both Acrobat 5 and Acrobat 6.

When I create a layout (8" x 8") with Acrobat 5 Distiller I see the same 
thing you see, the page size that is displayed is a shade under the 
specified page size (approx 7.9" x 7.9"). When I create a layout with 
Acrobat 6, the page size is exactly the page size specified  (8" x 8") 
although there is a small strip of what looks like the dark gray margin on 
the right and bottom of the page even when the margins are all set to 0. 
(Starting to sound more like an Acrobat 5 issue)

Furthermore, I put the snap grid on and placed maps in each layout to be the 
full (8" x 8") page size (so it goes beyond the displayed page in the 
Distiller 5 layout). When I printed both layouts to PDF files and viewed the 
PDFs in Acrobat with the rulers on they were both exactly  8" x 8" (even the 
one printed from Distiller with the "smaller" page size).

So I suggest you try to print the layouts...perhaps they will also print as 
you want them and not as the layout suggests.
