I just got a bugzilla answer from Mozilla on this and it has been
accepted. They said that just having the .pdf and .doc extensions was
too selective. It looks like they will accept all sets of .od?
extentions. No details as to when this will make its appearance in
Thunderbird.

I just got a bugzilla report[1] that the ODF extensions have been added! It took only 4 days from start to finish!

Support for these extensions should show up at the next Thunderbird update!
