May be worth looking at:
IPtraf - Ncurses based traf monitor
I use this for basic watching
trafshow - The Clasic traffic watcher
This is more advanced but doesn't log to a file (I think)
tcpdump - The classic packet watcher
This logs to a file and is the classic network watching / diagnosic tool,
can be set to record headers or contents and such, anyhow RTFM about it.
ippl - IP logger on freshmeat ATM
iplogger - IP logger on freshmeat ATM
Could be handy haven't looked myself
