First you can set Fill & Stroke color before writeText/WriteFText to set the color for the next write. For WriteFText in-between, DynaPDF has special commands which you can read in dynapdf_help around page 704. so \FC[255] gives red. So calculate RGB color like this: str(red + green * 256 + blue * 65536). with \FC[ before and ] after.
