Hello Beth,

I found this website
 http://www.macosxlabs.org/documentation/kiosk/intro.html ) very helpful
when setting up internet kiosks in Mac OS X for the UCR/California Museum of
Photography. Mac OS X can actually be secured fairly well. Also, we are
using a filtering program called KidsGoGoGo from Maki Enterprises that
allows the administrator to select specific websites or IP Addresses and
redirect all other requests back to a default page. iCab also works well
(and has a build in Kiosk mode), but we needed a greater flexability
(multiple browser windows, etc) and chose to use Internet Explorer instead.

Good Luck,
     - James
