We used the copy profile for our windows 7 images, but were able to do everything via GPO for our Windows 8.1 image. After doing both, I much prefer the GPO approach, the copy profile gave us lots of headaches.

Once configured, you will need to add the CopyProfile tag in your unattend.xml file.
