I have had no issues with deploying to a bootcamp partition as long as the partitioning was setup via the Apple setup process, our dual boot machines are first imaged by Deploystudio, with a pre-staged image for the windows side that we boot to once every thing is done for the Mac OS. We have had no issues re-imaging the Windows partition via the client or boot media as long as you set the correct destination partition.
Not sure how big a difference there is a difference between VMWare Fusion for the Mac and VMWare Workstation for Windows but all of my images are built in VMWare Workstation and I have no issues with any of those builds. We use Parallels for our VM solution on the Mac platform and none of my co-workers have reported issues running task sequences in it, or deploying the images I build in Vmware to it either.
