I don't have Windows 7 yet, and haven't heard of any problems like this. Midi Mapper used to be a "real" application you could open and edit the mapping from channels to devices. More recently, you could only choose an output device. As far as I can tell, Midi Mapper has lost most of its functionality in later versions of Windows. I just found this: http://www.sevenforums.com/sound-audio/47324-changing-midi-output-device-sb-xfi-midi-8080-a.html which has some discussion of selecting default midi devices (which seems to imply there IS a Midi Mapper in Windows 7, but it is just hard to configure.
