You said the evaporator is particularly cold, but no real cooling going on? I'd say the expansion valve is clogged. Wherever there's a too-large restriction, immediately downstream will be unnaturally cold. Could be the expansion valve, or even the receiver/drier.
I've had problems getting some systems fully charged, because the gauge set didn't fit right.
