I think that the law requires the deer to be secured to the vehicle on the exterior, with the proper registration tag attached to the deer, so that DNR officers can easily check to see if the deer is a legal kill or poached.
Last time I got a buck, it rode on the trunk of a '67 Plymouth VIP (with Commando V8) to the meat processor, and then rode in the back seat (in the form of steaks, burger, sausage) on the trip home.
