I've had a Kenmore compactor for decades and it's never failed. It takes a
standard size wax lined compactor bag which I replace weekly. With recycling
and yes, a GARBAGE DISPOSAL, the bag, closed and sealed by tape, is about
24X12X12" so could usually be changed every two weeks. Nothing wet or
malodorous or metal or glass goes in there.
Once mandatory recycling is required along with yard waste pickup (weekly
all year except when snow is present) and separated approved garbage is part
of the law, you get used to it. There is a cost to all this, of course. It's
the price of living in the city.

Obviously, we are way to lax here. I have never seen a compactor and
will bet money you could not buy one here without special ordering it -
which of course means it would be real expensive.
That is one of the reasons why I say some sort of unit that could sit
outside would be fine with me. I have no room to install one in the
kitchen in any event so having a nice looking appliance front on it
would be wasted.
I believe most of the commercial units like the Kenmore are some sort of
lever system powered by an electric motor. I assume it could also be
done by hydraulic power if one wanted to be fancy or alternatively by a
big screw device like a wine press. Probably easier to buy one than
build one however. By the time one collected all the bits and pieces, it
would cost an arm and a leg anyway.
