The lens for the fog lamp is part of the cover, you need the cover. For the price, I'd replace with Euro style headlamp assemblies as the DOT lamps on the W201/W124 cars STINK. Take a look at the headlight assembly, it's plastic and if the locking tabs for the cover are broken you will have to replace the whole thing anyway.

On the other issues: the headrest problem is most likely a broken plastic connector between the motor rack and the headrest itself. This can often be repaired by a wire tie wrapped around the separated part. You will have to remove the back seat cover to do this -- take out the screw on the bottom and pull the panel down til it comes free.

The seat switch needs a shot of contact cleaner -- pull the knobs off (don't drop the headrest knob!) and squirt some good contact cleaner in and work the switch. They don't usually get used much and get dirty. Ditto for the fader.

I don't know how to remove the console cover, though...

The console cover pries up at the rear. I agree with everything Peter says. After you squirt the contact cleaner into the switch operate it about 100 times!! Usually they START to operate after 50-75 cycles.
