I did numerous 6V to 12V conversions on VWs some years ago, and it didn’t hurt a thing. The starters turned over in a heartbeat, but unless you really ground on them it wouldn’t hurt them at all.
In these cases it was just a 12V generator and replacement of all the lamps. Radio, too. I don’t recall replacing any gauges, maybe putting some dropping resistors in?
