EVOO has a smoke point of 420 F, avocado oil 520 F and a more neutral flavor.

My pro chef cousin Mario tells me not to use EVOO for high temperatures, but to 
add for the flavor after cooking.

In subs they cook with peanut oil; smoke point 450 F.  Grape and avocado oil 
come close.
