two ways:
If you know the composition of the rock (i.e., rock type), any one of a
number of texts on mineraology will give you the specific gravity.  Or, you
acquire a graduated or volumetric cylinder, fill with water (or some other
liquid) and determine the amount of displacement in cubic centimeters.
Weigh the rock in grams and you have grams per cubic centimeter.  Water
weighs one gram/cc.  So quartz for example would have a specific gravity of
2.7 or so (weighing about 2.7 times water for the same volume)
