It is not rust, it is light reflected from a lamp.
As for Montdieu, it depends how the slices were prepared and stored. I have here a large slice prepared by Jim Hartman 2 years ago, and it is still fine. Of course Colorado is drier than Venice.
And I wouldn't use that kind of language.
