I found a power adapter of the correct voltage (7.5v), but it's rated at 2.1amps, and the camera is rated for 7.5v 1.8amps. As I remember, amperage is more a rating of *potential*, rather than actual output, so would I be able to use that adapter to make it work?

Yes it will work. Just watch the polarity! +ve on adapter to +ve on camera, -ve on adapter to -ve on camera.

Those specs mean the camera shouldn't need more than 1.8A at the most, and the power adapter can put out up to 2.1A if whatever's attached should need that much. No problem, as long as the power supply (and power cables and circuit breaker) are rated as at least as much as the connected equipment's worst case, and generally the larger the power supply the better.
