I don't think there's anything special about an iMac versus other Mac
models. The biggest problem with setting up any LAN is that you can no
longer count on an ISP to provide all the settings, since *you* are the
network administrator.
The Mac can communicate with the Amiga even with standard Miami, although
you'd need to keep different settings files for the LAN and Internet
setups. To have the Amiga connect to the net and the Mac at the same
time, you'd need MiamiDeluxe, which also lets you share the net connection
with other machines.
