I'd think a 7200 with a good sized HD & plenty of RAM would get along 
nicely.  OS 9.1 would be my OS of choice.  Additionally, a G3 or G4 
upgrade is possible.  Preferentially, I'd go for a beige G3 but 
they're still a little pricey in the used market, unless there's a 
computer recycling day in your neighborhood...
