I dug up an old email from the listserv about this topic and this was
our recommendation (as communicated by Van):

"For Mifos development the JDK 5.0 is our current minimum requirement.
This means that development can be done with either JDK 5.0 or 6.0,
but if using the JDK 6.0 be sure not to use any of the JDK 6.0
specific functionality.

Building with the JDK 5.0 on the build server is the right way to
enforce this (thanks for your comments Nazir)"

Additionaly, Amit Levy made the following suggestion:

" Note that if you are using eclipse (and possibly in other IDE's), and
you have jdk5 installed as well as jdk6, you can configure an eclipse
project (mifos... wink, wink) to use jdk5 as opposed to 6. This is
probably the easiest way to make sure you're not using any new
functionality"
