Improve database structure for custom fields

As I understood GK's request, each custom field for each customer creates a row
in the custom fields table; instead, it would be good to have a single row per
customer with all custom fields used for that customer on that row.
Is this a change we'd want to make in the production database? Or something
we'd only do in the data warehouse?
