Jean,
I tried the same on a fresh database and am not able to reproduce it.
Here's what I did (on the reference app)
1) Navigate to configuration Administration->Organization-> Currency
Configuration
2) Remove "US Dollar" from allowed currencies and add any other currency
from "Available currencies"
Let us know if you are still facing this issue (any additional details like
steps to reproduce or screenshots would be helpful)
