just pkg_add -u is enough to update. but if you modified any of the files in /etc/ungoogled-chromium yourself in the past, you now own them and have to take care of changes. if you did, diff against /usr/local/share/examples/ungoogled-chromium and merge as necessary. ideally you want to not have changes in the files so that they get updated automatically.
