we do, but not together with mod_perl. Instead, we run a standard CGI +
Unix domain socket configuration, with Interchange running as a
standalone server.

The main caveat is imho that keeping a chroot which includes Perl
(recommended - I didn't see Perl updates like I saw elsewhere) intact,
is a lot of work, and that Interchange needs a considerable number of
modules, several of which have to be fetched from CPAN. Other than
that, it runs with little trouble.

No, and I can't recommend PHP in any case.
