The card's inputs probably work only one at a time. You would also need some interesting post-processing to merge 3 streams of RGB captured separately, and lack of sync would probably make it not work very well.
VHS has so little bandwidth that using composite video is just fine. Don't fuss about the cable, either. The source is already so noisy and low-bandwidth that it's not very important.
