What video format can I encode to which is suitable for streaming from a free software platform? I'm really after a solution which allows for a free server and free codec/plugin for streaming over an Intranet. Quality and bandwidth performance are important, but no so much as being free from patents and licence fees.

The server will be Linux and there will be clients of all OS flavours. Video is going to start off life as an input from a camcorder into my DC10+. What are my options? There don't seem to be too many... :o(
