VW offers a longer subframe bolt to help correct this problem.  The procedure
is explained in the Bentley manual.  Basically you'll need to drill about an 
inch 
beyond the existing (and messed up) threads and tap the new hole.  The 
procedure is pretty straightforward, but can be a real pain.  Sometimes the 
rear control arm bushing sleeves (which must be removed prior to the repair
process can get underway) may also be stubborn.  Once they're removed, the 
next challenge is tapping the new hole.  Most taps aren't as long as the job 
really requires.  That said, the process is possible, just be patient and use 
plenty of cutting fluid when tapping.

BTW, the VW part number for the bolt is:  N 101 418 01
