Well, if the engine is running under load and open throttle, and the ignition 
cuts out momentarily, it's going to flood the exhaust with a lot of unburned 
fuel. Then when the ignition cuts back in... BOOM! At idle, you would just 
notice a bit of a stumble, because there's very little fuel going in.

Now that I'm recalling details, I've realized that my oil & temp lights would 
start flashing (like they do when you tun on the ignition) whenever it 
happened, which led me to suspect the switch. So if your lights don't flash, 
then forget the switch... I'd still look for a loose contact somewhere.

It was very occasional for a few weeks, then slowly deteorated...  What you 
say is quite reasonable, but in my experience, VW electrical gremlins are not 
reasonable creatures.
