Make them yourself!  On my ITA car I made an
inverted "L" pedal out of aluminum sheet for the
throttle pedal.  It had an extension on the top part
that extended to the left to allow for better access
to the throttle while braking.  It's really easy to do
and you can customize it for your foot size.  
   Also, I positioned the camcorder so that it could
see the big tach that I mounted to the right of the
wheel (in front of the vents) and I mounted a big red
light on the dash by the glovebox so that I could see
where I (really) braked when I would review the tapes.
   Always run a camcorder in the car during all
sessions.  It is essential evidence that you can
decide to offer if you get protested.  It also
provides big time entertainment for your team and
family as well as for when you get old and cowardly! 
(I have a terrific tape of a Honda Civic flying over
my hood during an IMSA Firehawk race at Lime Rock - no
shit!!)

As much as I dislike them b/c of their "racer boy"
image, I have
pedal covers on my racecar pedals as well as on my old
'86 GTi. 
While making the clutch and brake less slippery, it
helps to widen
the accelerator pedal which aids in heel-toe driving. 
I used
Autolook covers b/c they were inexpensive but a myriad
of covers now
exist that range from functional to showy (read: not
worth the
money).  

As for adjusting tension, I didn't realize that's an
option.  If that
were the case, I'd love to increase the tension on the
'86 GTi
(street car) and decrease the tension on the '87 GTi
(ITA car).
