I know a few people who have put MK3 leather seats in MK2 GTI and even in a
MKI GTI.
MKI and MK2 seats are completely compatible (from my understanding).
To put MK3 seats in a MKII (or a MKI for that matter) your going to have to
cut the outside arm (by outside arm I mean LEFT arm on the driver's side and
the RIGHT arm on the passenger's side).  You can either chop off the extra
metal or you can just slide the arm into the correct spot and re-weld the
arm in place.
It doesn't look to hard but I'm sure that any VW tuning shop in your area
will know how to do it.

There's trick you can do to tighten the bolsters on MK3 leather seats... Get
those tie-down straps with tightening cranks (the straps they use to tie
down loads in pickup trucks), place telephone books (either white or yellow
pages) on both sides of the seat bolsters, wrap the tie-down straps around
the seats (over the telephone books placed on the blsters) and begin
cranking.

My friend brought the bolsters in by 1.5".

I don't know if you can use the same procedure to tighten the bolsters on
the later style GTI/GLI Recaros.

Just my $.02, but I think they don't need any adapting? I think they will
fit right in. I was looking at getting a pair of A3 seats awhile back and
the mountings/measurements for the track looked the same to me...
