It's a very cheap and easy fix.  I did this to my GTI 16v and I had no problem
with the belts slipping or anything.  Get a 8v pulley for your alternator, with
your A/C gone, you just need a total of two belts.  One belt runs the crank,
P/S pump and the other belt goes from the P/S pump all the way up to the
alternator.  My belt was a 45.5 inch belt, but most people use a 44.5 inch. 
*445 or *455 is usually the number on the belt.  Make sure the belts are tight
and you are ready to go.  Make sure the compressor and condensor are out and
take out the a/c lines too.  Any more questions, email me or the list.  They
