Raphael is right. It's about dumb / diskless terminals so there's a lot about PXE booting etc which I don't need.
I think I've found what I wanted though - a combination of openbox + idesk to handle the desktop icons + fbpanel to provide a panel at the bottom. I completely gave up on Gnome.
