I've used MochiKit in a Dashboard widget, and had no problems. I didn't use loadJSONDoc, however, as I fetched XML documents. However, it shouldn't be any difference between how MochiKit works in Safari, try to run the widget code in there and watch for log messages in the JavaScript log or on the console. There is no reason why it shouldn't work.
