Some very novel and interesting suggestions so far. If your needs lean to an external probe for some reason and you are more inclined to an easy out-of-the-box solution (with a bit more cost), the probes at sensorsoft.com might be of interest. The models with the built-in web server are pretty neat.
Sensorsoft used to have a model-F Mon monitor posted on their web page. If not, it's pretty easy to set one up with the perl code they make available to query the probe.
