You can trim the list of source packages by installing the "gnome-devel" 
package.

You may want to have a look at the output "apt-get builddep mono" gets 
you, it gives a complete list of the build dependencies.

This information is really useful, anyway, people seem to frequently 
have issues installing Mono from source on Ubuntu. You may try to 
request the Mono team to include a link on their Wiki page.
